Raw Coconut & Cacao Pudding

• 2 cups of fresh young coconut meat
• 2 tbs raw cacao powder
• 2 tbs Coconut Magic organic, coconut flower nectar
• 2 tbs Coconut Magic organic, raw coconut oil (liquid consistency)
• 2 tbl filtered water or pure coconut water
• 1 vanilla bean
• Optional: a few drops of peppermint essential oil &/or 1 tsp maca (for a superfood hit!)
• Fresh strawberries/raspberries & walnuts (omit for nut-free) to garnish


1. Puree the coconut meat, nectar, oil and water in a high-speed blender until mixture becomes a puree
2. Remove the vanilla pods from the beans and add the remaining ingredients to the blender until a smooth, glossy consistency is reached (can add additional water to aid the blending process)
3. Top with walnuts, strawberries, and even a crumbled Coconut Magic Raw Cacao bar (to REALLY satisfy the chocolate craving!)

Note: this recipe can be frozen for a wonderful summer, guilt-free treat! Just remove from the freezer 2 minutes before serving.
