Coconut Gingerbread Cookies

2 cups of almond meal
3 tblsp Coconut Magic coconut oil
1/2 cup of Coconut Magic coconut flower nectar
1 pinch of baking soda
1 tsp cinnamon
1 tsp nutmeg
tblsp ground ginger
What to do:
Pre-heat oven to 180 degrees.
Mix all ingredients together in a bowl. Stir well until combined. You can use a food processor to combine. Roll mixture into small bowls and place on a baking tray, with baking paper OR greased with coconut oil. Squash the balls with your hand to flatten them into cookie shapes.
Bake in the oven for about 10 minutes.
Notes and Options:
Add some raw cacao nibs for a hint of crunchie chocolate.
