Raw Vegan Banana & Strawberry Cream Pie

This vegan cream pie, made with banana's and strawberry is a delightful burst of energy. The seeds are a great source of iron and many other nutrients.

CRUST:

1/2 cup soaked almonds (overnight or at least 2 hours)
1/2 cup soaked or spouted sunflower seeds
1/2 cup pitted dates (soaked for 30 mins)
1/4 cup dried figs
1/4 cup Inca berries (or similar, you can use golden berries too)

In a food processor, blend all ingredients and press firmly into a 10 inch pie dish (or cute hearth shaped silicon cups). Set in the fridge while the filling is prepared.

FILLING:

1 Banana
3/4 cup Coconut Oil
1/2 cup strawberries
1/4 cup brazil buts
1/2 cup dates
1/4 cup desiccated coconut
1/4 cup Coconut Nectar

Blend filling until smooth creamy texture and then spread on top of base. Decorate with leftover strawberry’s (if you have any, ours didn’t last!!)
