Magical Coconut Sugar Spiced Chai

This vegan-friendly coconut spiced tea is a creamy, delicious alternative to coffee and contains plenty of health-promoting Ayurvedic spices. This recipe allows you to enjoy a delicious chai spiced beverage without the added sugar and chemical nasties you will find in many chai lattee syrups. The coconut sugar adds a subtle toffee-flavoured sweetness that draws out the strong flavor of the spices. This drink can be enjoyed either warm or cool straight from the fridge.

Magical Ingredients:

• 1 tea bag or tsp of organic loose leaf chai tea

• 1/2 cup of unsweetened nut (e.g., almond) milk

• 1/3 cup of organic unsweetened coconut milk

• 1 tbsp of coconut sugar

• 1 star anise

• 1 tsp coconut oil

• Toppings: sprinkle of extra coconut sugar and (optional) desiccated coconut

What to do:

1. Place all the ingredients in a pan and heat on low to a light simmer

2. Simmer for 5 minutes

3. Allow to slightly cool for 2 minutes before straining the liquid mixture into a mug

4. Sprinkle with extra coconut sugar and/or desiccated coconut
