Coconut Ginger Beet Smoothie

Magic Ingredients:

1/2 beetroot
300ml fresh coconut water
1 small-medium banana, frozen or if not frozen add 3 ice cubes
1/2 frozen strawberries
1 tsp coconut oil
2 tsp coconut nectar
1 thin slice ginger
1/2 tsp vanilla powder (or essence)
1 tsp acai powder (optional)
1 level tsp maca powder (optional)

What To Do:

First blend the beetroot (cut into chunks) with the water in the Vitamix at high speed for close to a minute, making sure it breaks down completely.

Add all other ingredients in the blender and whiz it for another minute so you can sip on a smooth as smoothie that not only looks good, but tastes amazing!

Makes 600mL, which means one large or two small smoothies!
