Vegan Coconut Pancakes

Easy to make, delicious to eat full of healthy ingredients and totally vegan! These coconut pancakes can serve as a delightful breakfast for you and your whole family.

Serves: 1
Makes: 6 x10cm pancakes

Magical Ingredients:

1 flax egg (1 tbs flaxseeds + 2 tbs boiling water)
2 tbs wholemeal flour
1 tbs coconut flour
2 tbs almond meal
1/2 tsp vanilla essence (or vanilla powder)
3 tbs water or almond milk
1 tsp coconut nectar
Coconut oil for cooking

Toppings:

Coconut nectar
Stella mingle seasoning
Fresh raspberries

What to do:

1. Make your flax egg
2. Heat your pan on medium to high heat.
3. Combine all ingredients.
4. Add approximately one teaspoon of coconut oil to the pan, allow it to melt.
4. Dollop mix (we made three at a time) into the pan and cook until lightly browned on each side.
5. Repeat until the mixture is all used up and serve with your favourite toppings
