Granola Clusters

Deliciously addictive would best describe these little gems! A breakfast jam packed with nutrition and topped with coconut yogurt and our favorite berries. You can cluster this recipe or leave it as is for a muesli.

Low GI, Vegan, Dairy, Gluten & Sugar Free
Makes: Granola Clusters
Level of Difficulty: Easy
Time Taken: 20 minutes

Magical Ingredients:

• ½ cup puffed buckwheat
• 1 cup puffed rice
• ½ cup macadamia nuts
• ½ cup crushed almonds
• ¼ cup sunflower seeds
• ¼ cup cranberries
• ¼ cup pumpkin seeds
• ½ cup coconut flakes
• ¼ cup currants
• ½ cup amaranth
• 1 – 2 tbsp coconut oil
• 1 tbsp coconut nectar

What to do:

1. Simple add all of the ingredients into a large bowl and mix together
2. To form clusters, melt coconut oil into a bowl, add the honey and pour in the granola mixture and stir through.
3. With your hands clump the mixture into small bowls and place on a plate.
4. Put in the fridge for 10-15 min or until coconut oil has set.
5. Serve with coconut yogurt, and your favorite berries or fruit.
